Savoury Rock Cakes

175g Plain Flour
150g rolled oats
½ tsp baking powder
½ tsp bicarb of soda
50g chopped sundried tomatoes
1 f.r.Egg
150ml Veg oil
4 tbs milk
4 tbs parmesan

Good foraged herb combinations:
Nettle, 3-cornered leek and chives.

Wild garlic and ground elder.

  1. Pre heat oven to 200 deg c
  2. Mix together all dry ingredients
  3. Mix egg, oil n milk separately then pour over dry, add the various foraged herbs and mix well.
  4. Place spoonfuls onto baking paper and bake for 15 – 20 mins
